Ripe and juicy tomatoes are one of nature’s most delicious ingredients and one of my favorites. Sadly, since true tomato season is only a short time out of the year, having the sweet and luscious homegrown fruit at your fingertips isn’t always possible. Additionally, I find it hard to buy regular large tomatoes at the grocery store, after reading NPR's article on how the Industrial Farming has changed the taste of tomatoes. Fortunately though, tomato season is upon us and in just a few weeks, I will be stocking up on the fresh and beautiful fruit at farmer's markets.

Although I try not to buy large tomatoes at the grocery store when I can, I do buy a lot of cherry tomatoes that seem to still have the sweet and crisp taste that I desire in a tomato. Cherry tomatoes have become a staple in our house, and it’s rare that I visit the store without buying a package. While I love eating them in salads, or in some type of Caprese dish, my favorite way to eat them is roasted.

Roasting cherry tomatoes is one the easiest things you can possibly do. It only includes three ingredients and a little bit of patience. The best part is that once they are done, the opportunities you have with roasted cherry tomatoes are pretty much endless. Use them as tomatoes sauce, use as an addition to your appetizer board, put them on top of toast or a log of goats cheese, or make them into salsa. Seriously, roasted cherry tomatoes are amazingly easy and truly delicious.

Easy Roasted Cherry Tomatoes
Also known as “Tomatoes Chelsea Style” thanks to my friend Laura.

3-4 cups of cherry tomatoes
2 teaspoons olive oil (garlic infused prefered)
¼ teaspoon kosher salt

To Make Roasted Cherry Tomatoes
Preheat the oven to 450° Fahrenheit. Line a dish with parchment paper or tin foil. Pour tomatoes into dish. Drizzle with olive oil and sprinkle with salt. Crack pepper, if desired. If using parchment, make sure to cut down any extra paper around the edges, as these can burn while in the oven. Place tomatoes on center rack in oven. Cook 30 – 45 minutes, or until tomatoes are browned on top and bubbling.

Once the tomatoes are pulled from the oven, I will prepare them one of two ways - serve them whole or mash them into a sauce-like consistency. If serving whole, I use this method when I am utilizing them as a topping for toast or as a side with meat and cheese board. If I am using them as sauce, it is usually when we are making pizza or salsa. Prepare the roasted tomatoes however you like because they are wonderful either way!

Keep in mind, the roasted tomatoes can also be prepared in advance as they store easily in the refrigerator for about 3-4 days.

  1. my fav recipe you've given me. i roast "chase and chels's tomatoes" at least 4 times a month!
