My husband loves barbecue, like LOVES it. He spent a month working in Kansas City, Missouri last year and every time he had the chance he would go out and discover a new BBQ joint. I think he went to like 6 or 7 different places before he left. We’ve never lived in the South, and I’m not sure we ever will (but who knows anything is possible) but barbecue holds a special place in our hearts.
Both my husband and I grew up with some version of BBQ pizza in our house. His mom would make it with Bisquick and Sweet Baby Ray’s shredded chicken. My parent’s always used sautéed onions and usually added cheddar cheese. When my husband and I moved in together, the BBQ chicken pizza was something that came to us naturally but we used both of our backgrounds to create our own version. There is something very ‘homey’ about barbecue and this pizza has all of those elements.
While this pizza doesn’t necessarily qualify as ‘real barbecue’ it sure does seem to satisfy the barbecue craving my husband gets every once in a while. Barbecue chicken pizza is a great meal as we transition into fall. It’s got the nice barbecue flavor of the summer, but it is comforting enough for those cool fall evenings. It’s the perfect pizza for weekend football watch parties, and evenings watching scary movies and carving pumpkins.
Barbecue Chicken Pizza
Olive Oil Pizza Dough (using the same recipe we wrote about in our other Pizza posts)
2-3 cloves of garlic, pressed
1/8 cup of extra virgin olive oil
2 ½ - 3 cups of shredded chicken or an entire (we buy one of the rotisserie chickens you can find at many grocery stores, then we just cut off all the meat and shred it)
1 cup of your favorite barbecue sauce (we use Bull's-Eye Original)
¼ red onion, sliced lengthwise into circles or semicircles
8 ounces mozzarella cheese, sliced into ½ inch thick pieces
15-20 sliced hot banana pepper rings

To Make Barbecue Chicken Pizza
Roll out olive oil pizza dough to desired thickness and shape, add to baking pan. Mix olive oil and garlic in small ramekin. Spread olive oil and garlic mixture across pizza dough. Stir together barbecue sauce and shredded chicken until well mixed. Using a spoon or spatula, spread the chicken across the dough, until it creates an even layer. Next, lay the onion slices out in uniform lines across the pizza. Take the mozzarella slices, and tear them in thirds. Place the mozzarella evenly across the pizza. Place pizza on middle rack in oven. Cook for around 21 minutes. Check for doneness around 16 minutes, turn the pizza around if browning on one side more than another.
Remove pizza from oven. Let cool for 2-3 minutes. Garnish with banana peppers and red pepper flakes, if desired. Slice, serve and enjoy!
