Kale Salad with Green Goddess Dressing and Roasted Chickpeas Recipe

You guys, it’s just been one of those weeks. I had everything set up to go smoothly and no matter what, I’ve just felt upside down. I’m blaming it on the fact that the awful bug that kept me bedridden last week is still lingering in the form of nasty head cold. This post was supposed to go out Tuesday, Wednesday and again yesterday and now I’m finally, finally getting it finished and up. So, I give into to the universe and whatever weird path it has me on right now.

Anyway, this salad. Oh man, this salad, I don’t even know where to begin. I am genuinely obsessed with this kale salad. One of my all-time-favorite bloggers, Felicia, of love.life.eat posted it and I knew I had to try it as soon as I saw it. We’ve eaten at least once a week since.

This salad is seriously out of control. I want to eat it all the time. Between the kale, roasted chickpeas, the combination of fresh fruit and the basil-yogurt dressing, this is one freaking delicious power salad. I seriously cannot get enough of it.

Let me start with roasted chickpeas. These little treasures were new to me before this recipe and now I want to put them on everything. I sprinkle them with a bit of cumin, cayenne and curry powder before popping them into the oven. Their savory and spicy flavor does a great job complimenting the hearty kale, bits of fresh fruit and creamy avocado in this salad.

And oh, the dressing. Don’t even get me started. This dressing is so wonderful and addicting. It’s a beautiful mash-up of what’s essentially pesto with a splash of fish sauce or anchovy paste (whatever you prefer) and creamy Greek yogurt. Oh man, I could actually just drink this dressing.

Can you tell I love this salad? It’s great post-workout or workday. I find myself craving it for lunch even when I just made it for dinner the night before. It’s nice that I can easily change what I mix into it based on what’s available in my cupboards. We’ve done different combinations of blueberries, apples, pomegranates, almonds, golden raisins and whatever else we can find lying around. Just make sure you begin with the kale, green goddess dressing and chickpeas, and then add in a few extra items.

Do yourself a favor this weekend and go make this kale salad. It'll be amazing. I promise.
