Gluten Free Meals with Pairdd

A few months back while attending an event here in Milwaukee I was introduced to a local company, Pairdd. Pairdd is a small start up based in MKE that provides a weekly gluten-free meal subscription service (similar to companies like birchbox). Each recipe comes with all the fresh ingredients needed to prepare it. The only things you need to supply are basics like salt, pepper and olive oil. The recipes are carefully tested to make sure it meets the gluten-free expectations and high quality standards that they strive to provide.

When I sat down to learn more about Pairdd I was really impressed with the idea behind it. While they are still growing and evolving, their ultimate goal is to create a subscription food service for those with all types of different illnesses or food allergies, such as fibromyalgia or lactose intolerance. Currently they are only focused on gluten free meals, but eventually, their website would allow you to select your ailment and find recipes or meals that would fit your needs and be curated just for you.

Recently, Pairdd sent me one of their most popular recipe boxes to try. I was surprised at how simple and delicious this meal was while also being gluten-free. The salmon with quinoa and kale (pictured above) included less than 10 ingredients and took me only 30 minutes to prepare. The best part, was that the meal was full of ingredients I almost always have in my kitchen which means I’ve been able to recreate this recipe at least twice since!

I’m incredibly fortunate to not suffer from any food intolerances, but many of my friends and family do. In some ways, I take what I eat for granted. I can basically consume whatever I like without it impacting my life. As I reflected on my eating habits and what effect having an illness like this would have, it made me realize how isolating and complicated it might feel. I love that Pairdd is doing what it can to provide meals that are appealing, easy and inclusive while also being gluten free.

The past few days have been about resting and resetting. Daylight savings threw me for a loop and my sleep schedule basically dove straight off a cliff. I spent the majority of last week staying up way past my normal bed time, tossing and turning all night, then waking up exhausted and heading to work. As my weekend came to a close I was feeling fatigued and run down. So, since my schedule allows me to work from home certain days of the week, that’s what I’ve been doing the last few days. Working from home, taking care of myself and trying to catch up on sleep and, oh, baking bread.

Some really cool things happened yesterday with work, life and the blog that I never expected. It was sort of crazy that they all occurred in one day but I’m taking it as a win. It was just the kind of day I needed to remind myself why I work so hard. I wish I could have bundle it up, hide it away, and bring it out again when I’m doing the self-doubt, insecure, feeling shitty about myself and life thing. It was pretty incredible and I’m totally pinching myself that any of it even happened.

I do need to confess something. I get really nervous sometimes when good things happen because I fear I will jinx myself. Isn’t that terrible?! I worry that if I enjoy it too much or get too excited or share it with others that it will disappear or something bad will happen. I realize this is totally ridiculous but I was almost afraid to even write this post in fear that it would make all the good things that happened yesterday fall apart. But, I did share because fears are ridiculous and meant to be concurred.

So, now that you listened to my silly tangent I will share with you this awesome Pharell song that I played on repeat last night in my living room while I hosted a little dance party for myself. It makes me so happy and I hope it does the same for you!

Dancing In My Red Dress

As I mentioned last week, I spent Saturday celebrating my girl Lizzibeth’s 1st Birthday. Let me just say, the whole thing was a total blast. Lizzi threw one heck of a party.

I spent most of the day hanging out with 10 amazing bloggers. Getting ready for the party, laughing, indulging in libation, swapping stories and of course, talking all things blogging. It was sort of like spending the afternoon with your best girlfriends, except I had just met all but 3 of them. It’s funny how blogging and the internet can bring people together. I just love it.

While at first, I felt a little out of my element amongst these gifted style bloggers. They were quick to embrace my little lifestyle blog and me. It was such a treat getting to know this group of talented and inspiring women.

I thought I would share a few fun photos from that night. Most of these are kind of silly because, let’s be honest, part-time runway model is not on my resume. But, it was really fun getting to play dress-up in Lizzi’s beautiful clothes and baubles.

Would you be surprised if I told you I was counting down the days until the first of spring? No, I think not. The milder weather this last week has given me the itch to back away from the comfort foods of winter and give my pantry a springtime overhaul. I’ve been craving more healthy and light meals. So in an effort to appease my appetite, I made a run to Pick ‘n Save this weekend so I could fill my kitchen with the freshest ingredients I could find.

This Weekend...

So, I know I've been a little absent this week. Let's blame me trying to get out of this winter funk, my husband's crazy work schedule and me still getting used to my new job. Or how about all of the above? 

Anyway, I know it’s super late notice but if you’re in Milwaukee this weekend I want to invite you to a little event that my darling friend Miss Lizzie Weasler is hosting! Her company, Lizzibeth, is celebrating its 1st Birthday! I’m going to pretend to be a part-time model with some other fabulous bloggers and wear some of her gorgeous gems down a runway Saturday night.
