Wisconsin’s done a funny thing to our food habits. Without even knowing it, it’s made us much more conscious and aware of what we’re ingesting. Last summer’s local farmer’s markets made it easy to access fresh fruit and veggies and that stuck with us throughout the winter. Being more active this winter and spring, has made us more mindful of how we’re feeding our bodies and what helps keep us going. And, fortunately our close proximity to our favorite Wisconsin Grocery store has helped to ensure we have access to all the ingredients we need for eating healthier.

Friday Night Food Trucks

Milwaukee Street Eats Festival 2014

I feel like the title of this post would make a great country song. Ha! Makes me smile thinking up tunes and lyrics in my head.

Anyway, last Friday, my Mr. and I both had the day off. I had a real hankering for some serious food. We were going to get a giant plate of wings from our favorite dive bar, when a friend texted us to meet them downtown at Milwaukee’s Street Eats. We immediately said yes as we haven’t really gotten to explore the food truck scene here yet.

Kitchen Staple: Strawberries and Sour Cream

Kitchen Staple - Strawberries and Sour Cream with Brown Sugar | Recipe by chelsa-bea.com

It’s funny to think how much has changed in a year. A year ago I was quitting jobs, attending graduations, saying a few of our first goodbyes, beginning to pack boxes, getting ready for family to come to town, prepping to celebrate a special 30th birthday, in the midst of my second quarter life crisis and dragging myself through the emotional trenches of preparing myself to leave my beloved Des Moines. And now, here I am in my dear Milwaukee, finally enjoying the springtime weather with open windows, sunny days and mid-west thunderstorms. No matter how many days, weeks or months go by, I am still amazed by how quickly time passes. The next 6 weeks are big ones for us. We’re marking one year on so many things. Even this little place will be celebrating her first birthday.

This month has been much more consistent, and I feel more at ease then I have in awhile. While we’re through overnights and finally onto normal sleep schedules and spending time together, just when I think things are beginning to calm, we get a few nice surprises. I wouldn’t and shouldn’t expect our life to stay too simple or calm, because otherwise it certainly wouldn’t be this grand adventure.

A favorite summer dessert. Simple and delicious. Perfect for kids and crowds! Strawberries and Sour Cream with Brown Sugar | Recipe by chelsa-bea.com

So, what’s our big news? We’re moving! Don’t worry, it's not to a new city, and not even right away but to an adorable new house just down the street from our current residence. It all kind of happened in a few days but I couldn’t be happier about it. It’s funny how just when you need it to, the universe throws things into place.

Anyway, this strawberries and sour cream recipe (yes, I know, another non-recipe, recipe for you) is one of my favorite warm weather desserts. It’s sweet, sour and creamy flavor is a refreshing and a delicious treat. While it might not be entirely healthy, I can’t resist just a few juicy strawberries dipped in sour cream and brown sugar. I know it sounds kind of crazy but promise me you'll just give it a try.

Kitchen Staple - Avocado Toast

Simple and Delicious Avocado Toast | Recipe by chelsa-bea.com

First let me just start by saying thank you to everyone who emailed, texted and called about Tuesday’s post. I was pretty nervous about putting such a raw and honest post out there but everyone’s love and support meant so much to me. So, thank you from the bottom of my heart.

With things being so hectic lately, my time spent in the kitchen has been cut short. In an effort to stay healthy, which I’ll be honest, I’m not always good at when things get crazy, I’ve been relying on simple and familiar dishes to get me through. This avocado toast is by far one of my favorites.
